Whole bunchy goodness, the Pinot Noir was picked early off the home block to retain the high
natural acidity. This proving essential to alleviate the potential elevated pH and softening of the
wine that comes with 100% whole bunch winemaking due to the release of potassium from the
stalks. 50% carbonic maceration utilised here showing intense earthy/stalky aromas initially in the
glass, gradually tapering off upon breathing to reveal the light red fruits hidden underneath. If one
has the patience, revisiting the bottle a day or two later for a glass will reward the drinker with
characters of rose water and Turkish delight. Lower alcohol, smooth with a fine tannin structure to
avoid overpowering the pure delicacy of this Piccadilly Valley Pinot.
